Split Pea Soup Recipe
1-2 tbsp Olive Oil
1 Medium Onion, chopped
1 Garlic Clove, crushed
75g/3oz Green or yellow Split Peas, soaked overnight in plenty of cold water
600ml/20fl.oz. Strong Stock

1. Heat the oil in a medium saucepan, add the onion and sauté over a medium
heat for 2-3 minutes until just beginning to soften and take on colour.
2. Add the garlic, and sauté stirring for about 1 minute then add the split
peas, stock, herbs, salt and black pepper, mix well and bring to the boil.

liquidiser and blend until smooth. If necessary, reheat before serving.
Sprinkle with a little fresh parsley and serve hot with crusty bread or
