12 Large Flat Mushrooms
2 Shallots, finely chopped
175g/6oz Stilton Cheese
25g/1oz Fresh white Breadcrumbs
Salt and Black Pepper
Preheat the oven to 180C, 350F, Gas Mark 4. Remove the stalks from the mushrooms
and chop finely.
Wipe the caps with damp kitchen paper.
Melt half the butter in a saucepan add the chopped mushroom stalks and
shallots and fry gently until soft and transparent.
Remove the pan from the heat and allow to cool for 5 minutes, then crumble in
the cheese and add the breadcrumbs,
salt and pepper. Mix well.
Use the remaining butter to grease a shallow ovenproof dish, large enough to
take the caps in one layer.
Place the caps in the buttered dish and divide the stilton mixture between them,
Bake in the oven for 15-20 minutes until the caps are just tender and the topping
is golden and bubbling. Serve immediately.
