Deep Fried Eggs

Half fill a frying pan with oil and heat until very hot but not smoking - about
VERY CAREFULLY swirl the oil around with a spoon then very carefully break an egg into the
moving oil. Cook for 1-2 minutes basting all
the time and turning the egg twice.
Remove the egg from the pan, drain on kitchen paper and sprinkle with salt
and pepper. Keep warm whilst you cook the remaining eggs in the same
way. Serve immediately.
