Provolone Frittata (Flat Omelette)
Hot Vegetarian Herbs
Main Course Gluten Wheat Free
Paprika (check ingredients label)
2 Shallots, finely chopped
2 tbsp Freshly chopped Basil
100g/4oz Provolone Cheese, thinly sliced
1 tbsp Vegetable Oil
In a large mixing bowl, beat the eggs.
Add the salt, paprika, shallots, basil and cheese and mix well.
Heat the butter and the oil in a large frying pan until hot then pour in the egg.
Fry gently for 3-5 minutes or until set and golden brown then turn (using a large plate
invert the omelet onto before returning it to the pan) and continue to fry until the
second side of the omelet is completely set and browned.
To serve - cut
into wedges and serve immediately.
