Provolone Frittata (Flat Omelette)    Veg  HT  MC  15mins



Serves   4      Hot   Vegetarian   Herbs  Main Course    Gluten Wheat Free



   6 Eggs


   Paprika (check ingredients label)

   2 Shallots, finely chopped

   2 tbsp Freshly chopped Basil

   100g/4oz Provolone Cheese, thinly sliced

   50g/2oz Butter

   1 tbsp Vegetable Oil




1. In a large mixing bowl, beat the eggs.


2. Add the salt, paprika, shallots, basil and cheese and mix well.


3. Heat the butter and the oil in a large frying pan until hot then pour in the egg.


4. Fry gently for 3-5 minutes or until set and golden brown then turn (using a large plate to invert the omelet  onto before returning it to the pan) and continue to fry until the second side of the omelet is completely set and browned.


5.  To serve - cut into wedges and serve immediately.
