4 Hot Vegetarian Main Course Gluten Wheat
1 Medium Onion,
2 Fresh Chillies,
deseeded and finely sliced
1 tbsp Freshly
Chopped Coriander (cilantro)
6 Eggs, beaten
Salt and Black
2 tbsp Vegetable
1. In a large
mixing bowl, mix together the onion, chillies coriander, eggs, salt and pepper.
2. Heat half the
oil in a large frying pan, pour in half the egg mixture and cook over a medium
heat until set. Turn and cook the other side until lightly browned.
3. Remove the
cooked omelet from the pan and keep warm whilst you repeat with the remaining
oil and egg mixture.
immediately with a fresh tomato sauce.
