African Peanut Stew Veg HT MC W.African 40mins

2 tbsp Peanut Oil
2 large Onions, chopped
2 Garlic Cloves, crushed
100g/4oz shelled Peanuts
1.2kg/2˝ lb Yam, peeled and cut into small chunks
1 small Cabbage, shredded
1 teasp Cayenne Pepper
2.5cm/1-inch Root Ginger, grated
1 tbsp Freshly Chopped Coriander (Cilantro)
120ml/4fl.oz. Fresh Tomato Juice
120ml/4fl.oz. Fresh Vegetable Stock
4 tbsp Peanut Butter
175g/6oz Fresh Okra, cut into thick slices
1. Heat the oil in a large saucepan add the onions and garlic and sauté for 5
minutes until soft.
2. Add the peanuts, yam and cabbage, mix well then cover and cook gently for 5
2. Add the cayenne, ginger, coriander, tomato juice and stock and simmer for a
further 5 minutes.
3. Stir in the peanut butter than add the okra and salt and cook for a further
15 minutes, stirring from time to time and adding more stock or water if
necessary. Serve hot.
