Buying: Choose specimens which are relatively firm, whole, with no wet or slimy  pieces
Storing: Unwashed  in a paper bag for 3-5 days in the refrigerator
Serving Allowances: 100g/4oz per person
 

Basic - Preparing Mushrooms

Trim the stalk base. Either wipe with slightly damp kitchen paper or peel the skin off the caps. Rinse briefly under cold running water, cap side up. Avoid getting water in the brown "gills" and dry immediately.  Pull the stem from the caps if desired.

Suitable methods and timing for cooking Mushrooms

 

Bake/Roast

y

Whole  =  20 - 25 minutes  Coat with oil.

Boil

y

Whole  =   7 - 10 minutes

Fry/Sauté

y

Whole, halves, slices   =  5 - 10 minutes

Grill

y

Whole, halves   =  4 - 8 minutes  Brush with oil

Microwave

y Thick Slices  =  2-3 minutes (225g/8oz)

Steam

y Whole,  Slices   =  8 - 12 minutes
