Spiced Red Cabbage Recipe

Red Cabbage, shredded
Cooking Apples, peeled, cored and chopped
tbsp Olive Oil
inch Cinnamon Stick
teasp Ground Cloves
tbsp Brown Sugar
tbsp Lemon Juice
Put the cabbage into a large saucepan, cover it with cold water and bring tip to
the boil; drain in a colander.
Fry the onion and apple in the oil in the same large saucepan for 5-10 minutes,
then add the cabbage,
raisins, salt, cinnamon, ground cloves, sugar and 1 tbsp of the lemon juice.
Stir well, cover with
a lid and cook over a gentle heat for 1 1/2 hours, stirring occasionally.
To serve, remove the cinnamon stick, taste the cabbage and add the rest of the
lemon juice if necessary.
A festive accompaniment to serve with
turkey or pork at
Christmas and Easter.
