Simple Samphire Recipe

Rock Samphire at its most basic but delicious: boiled and simply dressed.


Serves 4

125g/5oz Fresh Rock Samphire

3 tbsp Olive Oil

1 tbsp Lemon Juice

Black Pepper



1. Wash the samphire well, place in a large saucepan, cover with cold water and bring to the boil.


2. Reduce the heat, partially cover the pan and simmer for about 8 minutes.


3. Meanwhile, place the olive oil, lemon juice and black pepper in a small bowl and whisk until well blended.


4. Once cooked, drain the rock samphire well, return to the pan together with the oil mixture and toss to coat well. Serve immediately.

Rock Samphire comes into season in spring, from the end of April and lasts through to October/November in the UK. It shouldn't be confused with marsh samphire, often referred to just as "samphire", which is in season in the summer.  It is possible to buy seeds and grow rock samphire in your garden.
