Vegetables Accompaniment Gluten Wheat Dairy Free Eggless
675g/1½ lb Butternut Squash
3 tbsp Extra Virgin Olive Oil
1 teasp Lemon Juice
Salt and Black Pepper
1. Peel the squash with a potato peeler, cut in half and remove the seeds then
chop the flesh into 12mm/ ½ - inch cubes.
2. Place in a steamer or in a colander suspended above a pan of boiling water,
cover and steam for 7-10 minutes until tender.
3. Transfer to a large mixing bowl, add the oil, lemon juice, salt and pepper
and toss gently to coat. Serve immediately.
