Rock Samphire with Capers Recipe

Rock Samphire lightly roasted with garlic and capers.

Ingredients

125g/5oz Fresh Rock Samphire
2 tbsp Olive Oil
1 large Garlic Clove, very finely chopped
1 tbsp Capers, drained and roughly chopped
The juice of half a Lemon

Pepper

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6.  Bring a large saucepan of water to the boil,  do not add salt,  add the samphire and cook for 3-4 minutes only.
 
2. Drain the samphire, refresh under cold running water and dry on kitchen paper.
 
3. Pour the oil into a shallow roasting tin and add the dried samphire and toss to coat well on all sides, scatter the garlic and capers over the top  and roast for 8-10 minutes. 

4. To serve - sprinkle with the lemon juice, season with pepper and serve immediately.

Rock Samphire comes into season in spring, from the end of April and lasts through to October/November in the UK. It shouldn't be confused with marsh samphire, often referred to just as "samphire", which is in season in the summer.  It is possible to buy seeds and grow rock samphire in your garden.
