2 teasp Vegetable Oil
600ml/20fl.oz. Frijoles Beans, cooked
Thickly slice half the onion and finely chop the remaining half.
Heat the oil in a large frying pan, add the sliced onion and fry until dark
Discard the onion and add the beans, mashing with a potato masher whilst they fry
and stirring constantly to prevent sticking.
Continue to cook and mash until the beans are the consistency of thick porridge.
To serve - transfer to a warmed serving dish and garnish with the remaining finely chopped onions.
