Greens with Bacon Recipe

A simple side dish recipe which featuring the cabbage combination of cabbage and bacon .

150g/5oz Lardons, Pancetta cubes or Streaky Bacon Rashers, chopped
1 Garlic Clove, crushed
450g/1lb Spring Greens, Savoy Cabbage or Kale,  coarsely shredded
240ml/8fl.oz. Water
Salt and Pepper



1. Heat a large frying pan until very hot then add the bacon (without any extra oil) and sauté over a medium high heat, stirring frequently, until crisp. Remove with a slotted spoon and drain on kitchen paper.

2. Add the garlic to the fat frying pan and sauté, stirring, until golden then add the greens and the water, mix well, cover and simmer for 8-10 minutes, or until tender.

3. Remove the lid and continue to simmer until most of the liquid has evaporated then add the cooked bacon and season with salt and pepper to taste. Serve immediately.

Unless your bacon is unusually lean, don't add any extra fat or oil as the fat in the lardons will render down when fried

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. Small items are cooked uncovered, but larger pieces may need covering after the initial browning to complete the cooking. The pan is shaken, over a high heat to move the food around, and prevent sticking. It is important not to overfill the pan.
