Garlic Rock Samphire

Rock Samphire sautéed in garlic butter.

Ingredients

50g/2oz Butter

2 Garlic Cloves, crushed
2 tbsp freshly chopped Parsley
125g/5oz Fresh Rock Samphire
Black Pepper

Instructions

 

1. Heat half of the butter in a large frying pan over medium heat until melted.

2. Add the samphire and immediately turn the heat up to high then cook, tossing  frequently, for about 3 minutes.

3. Add the remaining butter, garlic and parsley and continue cooking for a further 2 minutes. Season with salt and pepper and serve immediately.

Rock Samphire comes into season in spring, from the end of April and lasts through to October/November in the UK. It shouldn't be confused with marsh samphire, often referred to just as "samphire", which is in season in the summer.  It is possible to buy seeds and grow rock samphire in your garden.
