Vegan Fruit Rice Pudding   HT  Veg  DP 60mins


Serves 4     Hot     Vegetarian    Vegan     Gluten  Dairy  Wheat  Free    Dessert



100g/4oz  Short Grain White Rice
480ml/16fl.oz. Rice or Soy Milk
1 teasp Ground Cinnamon
225g/8oz Sugar
2 teasp Vanilla Extract (or check ingredients label)
100g/4oz Apples, peeled, cored and diced

100g/4oz Sultanas




1. Place the rice, milk, cinnamon, sugar and vanilla in a medium saucepan, bring to the boil stirring, then reduce the heat and simmer for 30 minutes, stirring from time to time.


2. Add the fruit to the pan, mix well, and continue to simmer for a further 20 minutes, stirring occasionally. Serve hot.
