Lentil and Pepper Sauce HT

Ingredients
1 Tablespoon Olive
Oil
1 large Onion,
finely chopped
2 Garlic Cloves,
Crushed
1 Green Capsicum
(sweet pepper), finely chopped
1 Red Capsicum
(sweet pepper), finely chopped
2 Chillies, finely
chopped
1 large Tomato,
diced
240ml/8fl.oz.
Fresh Vegetable Stock
100g/4oz
pre-cooked Lentils
1 teasp Freshly
Chopped Basil
Salt and Black
Pepper
Instructions
1. Heat the oil in a large saucepan, add the onions, garlic, peppers and
chilli and sauté until soft, stirring from time to time.
2. Add the tomatoes and stock, mix well, reduce the heat, cover and simmer
for 20 minutes.
3. Add cooked lentils basil, salt and pepper and heat gently for 5 minutes
stirring constantly and adding a little water if the mixture is too thick. Serve
hot with pasta, gnocchi or rice.
