Cold Vegetarian Vegan Dessert
Pudding Dairy Gluten Wheat Free
75g/3oz Dessicated Coconut
1 tbsp Cornflour
6 tbsp Lemon Juice
3 tbsp Sugar
3 tbsp Orange Juice
100g/4oz Soft Tofu, puréed
2 teasp Grated Orange Rind
1. Place all the fruit in a large bowl, sprinkle over the coconut and toss until
well coated. Chill.
2. Place the cornflour and lemon juice in a medium saucepan and stir until well
blended. Over a low heat add the sugar and orange juice and cook for 5-8
minutes, stirring constantly, until the mixture thickens. Remove from the heat
and allow to cool completely.
3. Fold the puréed tofu and orange rind into the cooled mixture and chill for
at least 1 hour.
4. To serve - transfer the fruit to a serving bowl and pour the tofu mixture
over the top. Serve immediately.
