Creamy Tomato Soup

x 400g/14oz Tins Chopped Tomatoes
Fresh Vegetable Stock
Soft or Medium Tofu
Salt and Black
Freshly chopped Basil to garnish
Place the onions, tomatoes, salt pepper
and water into a large saucepan.
the boil, then lower the heat and simmer, uncovered, for 20-30 minutes.
Place the tofu into a food
processor or liquidiser together with a few
spoonfuls of liquid from the soup.
Process until well blended and smooth.
Add the tofu mixture to the saucepan and cook gently over a very low
heat, stirring from time to time, for a further 5 minutes.
To serve - transfer to individual soup bowls/plates and sprinkle each
with a little basil to garnish. Serve
