Dairy-Free Creamy Tomato Soup  Veg   HT    SP    45mins


Serves    4      Hot    Soup   Starter   Hors d'oeuvre   Vegan   Vegetarian    Healthy Eating     Dairy  Gluten Wheat Free  



   2 Onions, chopped

   2 x 400g/14oz Tins Chopped Tomatoes

   360ml/12fl.oz. Fresh Vegetable Stock

   225g/8oz Soft or Medium Tofu

   Sea Salt and Black Pepper

   Freshly chopped Basil to garnish




1. Place the onions, tomatoes, salt pepper  and water into a large saucepan.  Bring to the boil, then lower the heat and simmer, uncovered, for 20-30 minutes.


2. Place the tofu  into a food processor or liquidiser together with a few spoonfuls of liquid from the soup.  Process until well blended and smooth.


3. Add the tofu mixture to the saucepan and cook gently over a very low heat, stirring from time to time, for a further 5 minutes.


4. To serve - transfer to individual soup bowls/plates and sprinkle each with a little basil to garnish. Serve hot.
