Dairy-Free Cream of Celery Soup   Veg  HT  SP  45mins


Serves     6      Hot    Soup   Starter   Hors d'oeuvre   Vegan   Vegetarian    Healthy Eating    Dairy Gluten Wheat Free  Eggless



   1 Head of Celery, finely chopped

   1 Onion, finely chopped

   2 tbsp Vegetable Oil

   900ml/1-1/2pts fresh Vegetable Stock

   Sea Salt and Black Pepper

   1 tbsp freshly chopped Herbs (e.g. parsley, basil, thyme)

   225g/8oz Soft or Medium Tofu

   Freshly Chopped Parsley to serve




1. Heat the oil in a large saucepan, add the onion and celery and  sauté  for a few minutes.


2. Add the stock, salt, pepper and herbs.  Bring to the boil, stirring well then lower the heat, cover and simmer for about 20 minutes.


3. Leave to cool slightly, then place in a liquidiser or food processor together with the tofu and blend until smooth.


4. Return to the saucepan and reheat gently.  Serve topped with parsley.
