Cream of Celery Soup
Soup Starter Hors d'oeuvre
Vegan Vegetarian Healthy Eating
Gluten Wheat Free Eggless
Head of Celery, finely chopped
Onion, finely chopped
tbsp Vegetable Oil
fresh Vegetable Stock
Salt and Black Pepper
tbsp freshly chopped Herbs (e.g. parsley, basil, thyme)
Soft or Medium Tofu
Freshly Chopped Parsley
Heat the oil in a large saucepan, add the onion and celery and
sauté for a few
Add the stock, salt, pepper and herbs.
Bring to the boil, stirring well then lower
heat, cover and simmer for about 20 minutes.
Leave to cool slightly, then place in a liquidiser or food processor
tofu and blend until smooth.
Return to the saucepan and reheat gently.
Serve topped with parsley.
