Tomatoes, skinned and chopped
Celery, finely chopped

1. Cook the
bacon in a pan until the fat begins to run but the bacon is not brown. Add the butter to the pan then add the vegetables and
toss in the fat to coat.
2. Add the
stock, herbs, salt and pepper, cover and simmer for about 35 minutes.
through a sieve or blend in a food processor until quite smooth. Return to
the pan and reheat before serving.
