1. Melt the
oil in a large saucepan, add the apple and vegetables and sauté for 1-2 minutes. Sprinkle over the curry powder and flour
and cook for a further minute.
stir in the stock, bring to the boil and cook until thickened. Add the remaining
ingredients, cover and simmer for 50 minutes.
3. Rub through
a sieve or process in a blender until smooth. Return to the pan a heat
through, adding a little lemon juice to taste. Serve hot.
