Minestrone with Bacon HT

Serve 4 Hot
Pork Vegetables Vegetable Soups Italy Europe
400g/14oz tin Haricot Beans
Garlic cloves, crushed
rashers Streaky Bacon, chopped
Tomatoes, peeled and chopped
Freshly chopped Parsley
teasp Fresh Thyme
teasp Freshly chopped Basil
Large Carrot, chopped
Large Potato, diced
Stick Celery, chopped
Small Pasta e.g.
1. Heat the
oil in a pan and fry the onions and garlic until soft and transparent. Add the bacon and fry for a further 3 minutes.
2. Add the
drained beans, water, tomatoes, herbs, carrots, potatoes, celery, leek, cabbage,
salt and pepper. Cover and simmer for 30 minutes.
3. Add the
pasta and cook for a further 20 minutes or until the pasta is tender.
4. Just before
serving, stir in the parmesan cheese. Serve hot.
