Lentil and Lemon Soup Veg

Split Red Lentils
tbsp Olive Oil
Sticks Celery, chopped
Fresh Vegetable Stock
zest and juice of 1 Lemon
teasp Ground Cumin
Green Capsicum, deseeded and sliced
Melt the oil in a pan, add the onion and celery and sauté gently for about 4 minutes.
Remove from the heat and add the lentils, stock, lemon zest, lemon juice, cumin, salt and pepper. Bring to the boil then simmer,
covered, for 30 minutes.
Add the pepper and simmer for a further 30 minutes.
Serve hot sprinkled with parsley or chives.
