4 Hot Beef Pork

Red Capsicum, half sliced, half chopped
Green Capsicum, half sliced, half chopped
Beef Stock Cubes
x 400g/14oz tin White Beans
tbsp Soured Cream
Lightly fry the bacon in a frying pan until the fat begins to run.
Transfer to a large saucepan and add the chopped capsicum, stock cubes, water
and drained beans. Bring to the boil and simmer for 20 minutes.
Blanch the capsicum slices in boiling water for 5 minutes.
Remove the soup from the heat, add Tabasco sauce and salt to taste then stir in
the soured cream.
To serve - garnish with the blanched capsicum slices.
