Vegetarian Fruit Spices Soup Starter Gluten Wheat
675g/1½ lb Ripe Dark Plums, halved and stoned
A strip of Orange Zest
240ml/8fl.oz. Orange Juice
¼ teasp Ground Cardamom
A pinch of ground Cloves
¼ teasp Ground Cinnamon
90ml/3fl.oz. Natural Yoghurt
1 teasp Balsamic Vinegar
4 teasp Natural Yoghurt to serve
1. Place the
plums, orange zest and juice, cardamom, cloves, cinnamon and honey in a
saucepan, bring to the boil, stirring, then reduce heat, cover and simmer for
about 30 minutes, or until the fruit is very soft.
2. Remove the pan
from the heat and allow to cool a little before transferring the mixture to a
blender. Blend to a very smooth puree.
3. Return the soup
to the rinsed out saucepan and reheat gently, adding the yoghurt and a little
more orange juice to attain your desired consistency.
4. Remove from the
heat, add the
balsamic vinegar and mix well. This soup can now be chilled if you want to serve

or cold) - transfer to small soup bowls and swirl a teaspoon of yoghurt into
