Slovakian Green Bean Soup    HT  SP  50mins

Serves 4-6     Hot Vegetables Herbs Spices Eggless Slovakia Europe

450g/1lb Fresh Green Beans, cut into 2.5cm/1-inch lengths
960ml/32fl.oz. Chicken Stock
1 Garlic Clove
1 teasp Vinegar
1 small Onion, finely chopped
2 tbsp Butter
2 tbsp Plain Flour
1 teasp Paprika
2 tbsp Freshly Chopped Parsley
4 tbsp Sour Cream


1. Place the beans, stock, salt, whole garlic clove, vinegar and onion in a large saucepan, bring to the boil then reduce the heat and simmer for 15 minutes. Remove from the heat.

2. Heat the butter in a small saucepan until hot then add the flour and cook over a medium heat for 1 minute until thickened then add the paprika and mix well.

3. Take a ladleful of the hot cooking liquid from the soup and gradually stir into the flour mixture until well blended then slowly pour it into the bean soup, stirring constantly.

4. Add the paprika and parsley, return to the heat and simmer for 10 minutes.

5. Remove from the heat, take out the garlic clove and stir in the sour cream. Serve immediately.

Common terms used when making sauces

Blend - To mix together ingredients, usually of different consistencies, to a smooth and even texture, utilising a utensil such as a wooden spoon or blender.

Coats a spoon – when a substance is rendered thin/thick enough so that when a wooden or metal spoon is inserted into it and taken out, the substance leaves a thin film “coating the spoon”.

Boil - To bring a liquid to boiling temperature and to maintain it throughout the cooking time.

Chop to – To cut into pieces of approximately the same size
