Serves 4 Hot
Vegetarian Vegan Gluten Wheat Free Dairy Free Eggless
2 Tomatoes, peeled
1 large Onion,
4 Garlic Cloves,
3 Bay Leaves
3 large Potatoes,
peeled and thickly sliced
1. Place all the
ingredients (apart from the potatoes) in a large saucepan, bring to the boil
stirring then reduce the the heat, cover, and simmer for 45 minutes.
2. Add the
potatoes and simmer for at least a further 45 minutes. The longer it's
cooked the better. Remove the bay leaves before serving.
