Below is an easy to make Lentil
4 Hot Soups Starter
tbsp Olive Oil
Carrots, finely chopped
Large Onion, finely chopped
Garlic Cloves, finely chopped
Strong Stock (lamb, beef, chicken or vegetable)
Lentils, washed and picked over if necessary
freshly chopped Thyme
teaspoon Balsamic Vinegar or Worcestershire Sauce
and Black Pepper
the oil, carrot, onion, celery and garlic in a large saucepan and cook over a
medium heat, stirring from time to time, until the vegetables are just tender.
the stock, lentils, bay leaf and thyme, bring to the boil then reduce the heat,
partially cover and simmer for 25 minutes, stirring from time to time.
in the vinegar or Worcestershire Sauce, season
to taste with salt and pepper and simmer for a further 2-3 minutes. Serve hot.
