1 Large Onion, chopped
675g/1˝ lb Fiddleheads, cleaned well
2 Sticks of Celery, chopped
2 Garlic Cloves, crushed
960ml/32fl.oz. Vegetable Stock
1 teasp freshly chopped Oregano
1 teasp freshly chopped Basil
1 teasp freshly chopped Parsley
Salt and pepper to taste
240ml/8fl.oz. Evaporated Milk
1. Place the onion, fiddleheads, celery, garlic and a little of the stock in a
food processor and process to a puree.
2. Transfer to a large saucepan together with the remaining ingredients apart
from the evaporated milk, bring to simmering point then partially cover and
simmer for 15 minutes.
3. Add the evaporated milk and continue to simmer for a further 10 minutes.
