Chickpea and Tomato Soup   Veg HT SP Egyptian  45mins


Egyptian name: Hasa Tamatat ma' Hummus

Serves 4-5    Hot Vegetarian  Vegan Vegetables Pulses Grains Spices Herbs  Soups Gluten Wheat Dairy Free Eggless   Egypt North Africa Nth African

Ingredients
2 tbsp Vegetable Oil
1 Large Onion, chopped
2 Garlic Cloves, crushed
1 tbsp Freshly Chopped Coriander (cilantro)
400g/14oz Cooked Chickpeas (fresh or tinned)
360ml/12fl.oz Fresh Tomato Juice
480ml/16fl.oz. Water
50g/2oz Long Grain Rice
Salt and Pepper
¼ teasp Ground Cumin
¼ teasp Ground Allspice

Instructions

1. Heat the butter in a large saucepan, add the garlic and onions and sauté gently until golden brown.

2. Add the coriander and sauté, stirring, for 3-4 minutes.

3. Add the remaining ingredients and bring to a boil, stirring. Reduce the heat to medium/low and cook for 20-25 minutes or until the rice is tender.

Blend - To mix together ingredients, usually of different consistencies, to a smooth and even texture, utilising a utensil such as a wooden spoon or blender.

Coats a spoon – when a substance is rendered thin/thick enough so that when a wooden or metal spoon is inserted into it and taken out, the substance leaves a thin film “coating the spoon”.

Boil - To bring a liquid to boiling temperature and to maintain it throughout the cooking time.

Chop to – To cut into pieces of approximately the same size
