Cambodian Sweet Soup    HT SP  Cambodian  180mins


Serves 4     Hot   Pork   Soup   Cambodia Asia  Dairy free


900ml/30fl.oz. Water
4 tbsp Fish Sauce (approx)
6 tbsp Soy Sauce (approx)
Salt and Pepper
300g/11oz Sugar (approx)
4 Hard Boiled eggs, peeled
675g/1-1/2lb Lean Pork, cut into large cubes
225g/8oz Bamboo Shoots, thinly sliced




1. Place the water, fish sauce, soy sauce, salt and pepper in a large saucepan and bring to the boil, stirring.


2. Add the sugar and mix well. Adjust the seasoning according to your taste, adding more fish sauce or sugar.


3. Add the boiled eggs, pork and bamboo shoots, mix well and bring to the boil. Reduce the heat, partially cover and cook for 1-1/2 to 2 hours stirring from time to time.


Traditionally served with rice.

Common terms used when making sauces

Blend - To mix together ingredients, usually of different consistencies, to a smooth and even texture, utilising a utensil such as a wooden spoon or blender.

Coats a spoon – when a substance is rendered thin/thick enough so that when a wooden or metal spoon is inserted into it and taken out, the substance leaves a thin film “coating the spoon”.

Boil - To bring a liquid to boiling temperature and to maintain it throughout the cooking time.

Chop to – To cut into pieces of approximately the same size
