Bacon & Split Pea

225g/8oz Dried Yellow Split Peas
225g/8oz Boiling Bacon, diced
1 Medium Onion, chopped
1 Small Turnip, chopped
1 Large Carrot, chopped
1 Stick of Celery, chopped
1 Large Potato, cut into 2.5cm/1-inch chunks
Salt and Black Pepper
1. Soak peas in plenty of cold water overnight. Drain Well.
2. Place the drained split peas, bacon, water and onions in a large saucepan,
bring to the boil then reduce the heat, partially cover and simmer for 1˝ hours,
stirring occasionally and adding a little more water if necessary.
3. Add the remaining ingredients and cook for a further 20 minutes or until all
the vegetables are tender. Serve hot with dough boys.
