Bacon and Quinoa Soup
Soups Dairy Wheat Gluten free Eggless
Stick of Celery, chopped
Onions, cut into wedges
Water or Vegetable stock
A 200g/7 oz piece of Smoked Bacon
2 Bay Leaves
Salt & Pepper
chopped Parsley to garnish
Melt the oil in a large saucepan, add the vegetables and cook, stirring from
time to time, until lightly browned then add the water and bring to a gentle boil.
Add the bacon, bay leaf, salt and pepper, reduce the heat, cover and simmer gently for

water if necessary.
Remove the bacon from the pan, cut into pieces, then return to the pan
together with the quinoa, bring to the boil then re-cover and cook for a further
