African Peanut Soup

Serves 4-6 Hot Poultry

960ml/32fl.oz. Fresh Chicken Stock
1 Jalapeno Chilli Pepper, seeded and finely chopped
75g/3oz Green Capsicum (Sweet Pepper)
75g/3oz Onion, chopped
125g/-5oz Crunchy Peanut Butter
1. Place the stock and chilli pepper in a large saucepan and bring to the boil.
2. Add the capsicum and onion, return to the boil, stirring, then reduce heat,
cover, and simmer for 15 minutes.
3. Remove from the heat and whisk in the peanut butter. Return to a very low
heat and cook, stirring constantly, until the peanut butter has melted and
mixture is well blended. Serve hot.
