4 Egg Yolks
4 tbsp Caster Sugar
½ teasp Plain Flour
1 teasp Vanilla Essence
510ml/17 fl.oz. Milk
1. In a large bowl, beat together the egg yolks and sugar until pale.
2. Stir in the flour and add three tablespoons of the milk. Bring the rest
of the milk to the boil together with the vanilla essence.
3. Slowly pour the boiling hot milk into the egg yolk mixture, stirring
4. Transfer back to the saucepan and continue to whisk
constantly over a low heat, until thickened. Serve hot or cold.
