Avocado and Pine Nut Salad Veg

4 Cold Vegetarian
Fruit Vegetables Herbs Nuts Salads Accompaniment
Gluten Wheat Free Eggless
Large ripe Avocados, skinned, halved and
tbsp Lemon Juice
Gherkins, thinly sliced
tbsp Pine Nuts
tbsp Olive Oil
and Black Pepper
Garlic Cloves, crushed
Fresh Mint Leaves, finely shredded
tbsp Natural Yoghurt
Dice the avocado flesh and put into a bowl. Sprinkle with lemon juice and toss lightly
till the avocado is coated. Add salt pepper and pine nuts, then sprinkle with
the oil and mix well.
In another bowl, mix together the mint, garlic and yogurt. Pour over the avocado
and toss lightly. Chill for 1 hour.
To serve - divide the salad between individual dishes and serve immediately .
