Cucumbers in Sour Cream

Serves 4-6 Cold

1 Medium Cucumber, peeled and thinly sliced
240ml/8fl.oz. Sour Cream
The Juice of 1 Lemon
1 teasp Castor Sugar
2 teasp Freshly Chopped Dill
1. Place the sliced cucumber on a large platter, sprinkle with salt and allow to
stand for 5 minutes.
2. Meanwhile, in a large mixing bowl, mix together the remaining ingredients.
3. Dry the cucumber slices with kitchen paper, removing as much of the water as
possible then add to the sour cream dressing, mix lightly then refrigerate for
30 minutes before serving.
