1 tbsp White Vinegar
3 tbsp Olive Oil
3 Garlic Cloves, crushed
1 Onion, thinly sliced
1 tbsp freshly chopped Green Chillies
1 teaspoon salt
1. Place the
chokos in a large saucepan and cover with cold water. Season with salt, bring to
the boil then cook for about 20 minutes or until tender.
2. Remove the
chokos from the pan and allow to cool.
3. Once cold, peel and halve the chokos, discard the seeds and cut into slices
about 12mm/1/2 inch thick. Place in a serving bowl and set aside.
4. In a small bowl, mix together the oil, vinegar, chilies and sliced
onions. Season well with salt and black pepper then pour over the sliced chokos
and gently mix together. Serve at room temperature.
