Chive Potato Salad Recipe

This is a classic potato salad which is perfect in its simplicity.

Ingredients

450g/1lb Potatoes
180ml/6fl.oz Mayonnaise
1 tbsp Freshly chopped Chives
Salt and black pepper

Instructions

 

1.  If using large potatoes, peel and cut into 1cm/-inch pieces. If using new potatoes, wash well then quarter or cut into 1cm/-inch pieces.

2. Place the potatoes and teaspoon of salt in a large saucepan, cover with cold water and bring to the boil. Reduce the heat and simmer for about 10 minutes until just tender.

3. Once cooked, drain the potatoes in a colander and cool under cold running water then spread over kitchen paper and dry well.

4. Transfer the cold potatoes to a large mixing bowl, add the chives, mayonnaise, salt and pepper and mix well with a metal spoon or spatula. Chill until ready to serve.

Tips, Options and Substitutions

 

Make sure the potatoes are completely cooked

There's no need to peel new potatoes as the skins are very tender however older potatoes work better in this recipe if peeled
