Prune Tomato and Feta Salad     Veg  CD  MC  15mins

Serves 4   Cold Vegetarian Vegetables  Fruit  Main Course  Gluten Wheat free  Eggless

675g/1 lb Cherry Tomatoes, halved
225g/8oz Feta Cheese, crumbled
1 Red Onion, thinly sliced
75g/3oz ready to eat Prunes, chopped
90ml/3 fl.oz. Olive Oil
60ml/2fl.oz. Wine Vinegar
1 Garlic Clove, crushed
Salad Leaves


1. Place the tomatoes, feta cheese, onion and prunes in a large mixing bowl and set aside.

2. In small bowl, whisk together the oil, vinegar and garlic.

3. Pour the dressing over the tomato mixture and toss lightly to coat.

Serve with mixed salad leaves.
