A Weekday Menu Recipe


Piquant Smoked Mackerel Salad    CD  MC 10mins

Serves 4   Cold  Fish  Fruit  Vegetables  Main Course  Eggless

2 Apples, halved
1 tbsp Horseradish Sauce
90ml/ 3fl.oz. Crème Fraîche
The Juice of ½ a Lemon
Salt and Black Pepper
100g/4oz Mixed Baby Salad Leaves
6 Smoked Mackerel Fillets, skinned


1. Cube 3 of the apple halves, reserving the remaining half in tact.

2. Grate the half apple into a mixing bowl then add the horseradish sauce, Crème Fraîche, lemon juice, salt and pepper and mix well.

3. Break the fish into large flakes and mix with the cubed apple.

4. Divide the salad leaves between 4 serving plates, top with the fish and apple mixture and spoon over the dressing. Serve immediately.
