whole Vanilla Pods
Brandy or Vodka
1 Granulated Sugar
Split the vanilla pods lengthways with the tip of a sharp knife then cut
into short lengths.
Place the vanilla and brandy in a large glass jar which has a tight-fitting lid.
Cover with the lid and allow to stand at room temperature for 3 weeks, shaking
the container vigorously every 3 days.
Strain liquid through a double layer of cheesecloth, very fine sieve or coffee
filter into a mixing bowl.
In a medium saucepan, combine the water and sugar over medium heat. Bring to the
boil, stirring constantly, and cook until sugar dissolves.
Remove from heat and cool then add to the vanilla mixture, stirring to
thoroughly combine. Pour mixture into a sterilised bottle, cover with a screw
top lid and allow to stand at room temperature for 1 month.
