This is a simple version of the
famous recipe which dates back to the 1950s and which was created in
celebration of Queen Elizabeth II coronation
Leftovers Poultry Fruit Spices Vegetables

450g/1lb Cooked (leftover) Chicken
8 tbsp Mayonnaise
200g/7oz Tinned Apricots
Curry Powder (or more to taste)
8 Spring Onions, very finely sliced
Drain the apricots then liquidise until smooth or pass through a sieve.
Shred the chicken and place in a large mixing bowl together with the remaining
ingredients. Mix well.
Cover and refrigerate until ready to serve. Serve with Salad.
