Rabbit with Chocolate    HT  MC  110mins

Serves 4     Hot Game Herbs Vegetables Alcohol Main Course Gluten Wheat Dairy free Eggless

8 Large Pieces of Rabbit
Salt and Pepper
2 tbsp Olive Oil
1 Onion, thinly Sliced
2 Carrots, thinly Sliced
2 Cloves of Garlic , crushed
2 Bay Leaves
300ml/10fl.oz. White wine
25g/1oz Dark Chocolate (70% cocoa solids) (check ingredients)
2 tbsp Freshly Chopped Parsley


1. Season the rabbit well with salt and pepper.

2. Heat the oil in a large saucepan the add the rabbit pieces and brown on all sides.

3. Add the onion, carrots, garlic and bay leaves, stir to mix well then add the wine and enough water to barely cover the rabbit. Bring to the boil then reduce the heat, cover and simmer very gently for 1˝ hours, stirring from time to time.

4. At the end of the cooking time remove from the heat, add the chocolate and parsley and stir well until the chocolate has melted. Serve immediately.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
