Grilled Miso Chicken   HT  MC  Japanese 90mins


Serves 4   Hot  Poultry   Vegetables  Alcohol  Main Course  Japan  Asia


2 tbsp light Soy Sauce
2 tbsp Saké
2 tbsp Mirin
2 tbsp light Miso
2 Spring Onions, thinly sliced
1 teasp freshly grated Ginger

1 Garlic Clove, crushed
8 boned Chicken Thighs

1 teasp Sesame seeds




1. Place the soy sauce, saké, mirin, miso, onions, ginger and garlic in a shallow dish and mix well. 


2. Add the chicken pieces, turn to coat well and marinate at room temperature for 1 hour, turning several times.


3. Preheat the grill to very hot.


4. Remove the chicken from the marinade and pat dry on kitchen paper. Grill for 5 minutes  then turn chicken and grill for a further 5 minutes or until brown and cooked through. 


5. To serve - transfer to a serving platter and sprinkle with sesame seeds.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
