Stuffed Bacon Chops

4 Hot Bacon Pork
Vegetables Fruit Nuts
Garlic Clove, crushed
Button Mushrooms, sliced
Dessert Apple, peeled and grated
Pine nuts, chopped
tbsp Fresh Parsley, chopped
tbsp Apple Juice
Preheat the oven to 200C, 400F Gas Mark 6. Melt the butter in a saucepan add the
onion, garlic and mushrooms and sauté until soft.
2. Remove from the heat, stir
in the remaining stuffing ingredients and mix well.
Cut the bacon chops in half lengthways to form a pocket. Stuff the bacon chops
with the prepared mixture
then place in an ovenproof casserole dish. Pour over the apple juice and
bake, uncovered, for 30-35 minutes. Serve immediately.
