900g/2lb Skinless boned Loin of Pork, trimmed of excess fat
1 teasp fresh Thyme Leaves
Salt and Black Pepper
1 Cinnamon Stick, halved
4 tbsp Oil
3 Bay Leaves
1. Rub the pork all over with the salt, pepper and thyme.
2. Heat the oil a large saucepan and when hot add the pork and fry on all sides
until golden brown.
3. Pour off the excess oil, then add the cinnamon, bay leaves and milk. Bring to
simmering point, then partially cover and cook for about 1- 1˝ hours, turning
the meat from time to time.
The milk will
reduce to a sauce consistency. Remove the cinnamon and bay leaves before
