Bring a large saucepan of salted water to the boil add the pasta and cook for
Meanwhile, melt the butter in a large pan. Stir in flour and cook for 1-2
minutes, stirring continuously. Remove from the
heat and gradually stir in milk. Return
to the heat and cook, stirring until sauce is thickened.
Stir in cheeses, salt and pepper and cook gently for 2-3 minutes until melted.
To serve - drain pasta well then toss in hot sauce. Sprinkle with the chives.
