Fettuccine Bolognese    HT  MC  Italian     90mins

Serves 4     Hot   Pasta  Beef   Pork  Alcohol  Main course   Eggless  Dairy Free Italy  Europe



350g/12oz Fettuccine Pasta (bows)

3 tbsp Olive Oil

1 Onion, finely chopped

1 Carrot, finely chopped

2 Sticks Celery, finely chopped

1 Garlic Clove, crushed

50g/2oz Streaky Bacon, finely chopped

450g/1lb Minced Beef

150ml/5fl.oz. Red Wine

2 tbsp Tomato Paste

1 x 400g/14oz tin Chopped Tomatoes

Salt and Black Pepper





1. Heat the oil in a large pan add the onion, carrot, celery and garlic and sauté gently until soft and transparent. Add the bacon and mince, raise the heat and cook until browned.


2. Stir in the wine, tomato paste, salt, black pepper and chopped tomatoes. Cover and simmer gently for about 1 hour, stirring occasionally.


3.  20 minutes before the end of the cooking time, bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes.


4. To serve - drain the pasta well and toss in the sauce. Serve immediately.
