Hot Vegetarian Leftovers Pasta Main

2 tbsp Olive Oil
2 tbsp Freshly
150g/5oz Mozzarella cheese, grated
1. Place the eggs in a large mixing and lightly beat. Add the pasta, salt and
pepper and mix well.

in a large frying pan making sure there's enough to completely cover the base.
Place half of the pasta in the pan, spreading it evenly over the bottom.
Sprinkle with the grated parmesan then add the mozzarella evenly over the pasta
